These vanilla pudding-filled sweet yeast balls have crumbles and powdered sugar on top. They make a fantastic, indulgent dessert that you can eat by yourself or with guests.
Ingredients
- 1 cup rolled oats
- 1 cup pitted dates
- 1/2 cup almond flour
- 1/4 cup cocoa powder
- 2 tablespoons maple syrup
- 1 teaspoon vanilla extract
- Pinch of salt
- 1/2 cup vegan pudding (any flavor of your choice)
- Optional toppings: shredded coconut, crushed nuts, or cocoa powder for rolling
Instructions
- In a food processor, blend the rolled oats until they turn into a coarse flour-like consistency.
- Add the pitted dates, almond flour, cocoa powder, maple syrup, vanilla extract, and salt to the food processor. Blend until the mixture starts to come together and forms a sticky dough.
- Remove the mixture from the food processor and place it in a bowl.
- Take about a tablespoon of the dough and flatten it in your palm. Add a small spoonful of vegan pudding in the center of the flattened dough.
- Carefully wrap the dough around the pudding, shaping it into a ball. Repeat this process with the remaining dough and pudding.
- If desired, roll the crumble balls in shredded coconut, crushed nuts, or cocoa powder to coat them.
- Place the crumble balls in the refrigerator for at least 30 minutes to firm up before serving.
