These little broccoli croquettes, also known as broccoli tots, are delightfully seasoned and sure to please everyone. They are crispy on the exterior and soft on the inside.
Ingredients:
- 250 ml lukewarm water
- 1 tsp sugar
- 1 tsp salt
- 21 g fresh yeast or 7 g dry yeast
- 500g flou
- 200 g smoked tofu
- 1 tbsp soy sauce
- 5 drops Liquid Smoke (optional)
- 1 red pepper
- 10 dried tomatoes
- 10 olives
- 15 g dried oregano
- Salt pepper
- Marinara dip
Instructions:
- In a small bowl, mix the lukewarm water with the sugar and salt. Add or crumble in the yeast and stir.
- Put the flour in a large bowl and add the dissolved yeast. Wait about 10 minutes without stirring and let the yeast activate slowly. Then knead the dough well, cover with a damp cloth and leave to rise in a warm place for 45 minutes.
- In the meantime prepare the filling. Cut the smoked tofu into small cubes and fry vigorously in a pan with oil. After about 2 minutes, add the soy sauce and liquid smoke and fry for another 4-5 minutes. Then set aside.
- Wash the peppers and cut into small cubes. Drain the sun-dried tomatoes and olives and also cut into small pieces.
- When the dough has risen, add the filling and the oregano to the dough and knead in.
- Shape the dough into 8-10 evenly sized balls and place in a casserole dish or cast iron skillet. These should be well embedded beforehand.
- Cover with a kitchen towel and let rise again in a warm place for at least 30 minutes. Preheat the oven to 180°C circulating air.
- Bake in the oven at 180°C for about 30 minutes until the pizza buns are golden brown. Serve warm from the oven with the marinara dip.
