The small apricots are available from July through September, and you may bake with them or simply eat them straight out of your fingers. If you find it to be too monotonous, you may also wrap the tiny orange fruits in dough, cover them with warm butter, and then sprinkle them with crunchy breadcrumbs. So make room in your stomach for the tiny, sweet dumplings—you won’t regret it!
Ingredients
- 8 fresh apricots
- 1 cup all-purpose flour
- 2 tablespoons vegan butter, melted
- 2 tablespoons sugar
- 1/2 teaspoon baking powder
- Pinch of salt
- 1/4 cup plant-based milk (such as almond or soy milk)
- 1/2 teaspoon vanilla extract
- Powdered sugar for dusting
Instructions
- Wash and dry the apricots. Cut them in half and remove the pits.
- In a mixing bowl, combine the all-purpose flour, sugar, baking powder, and salt.
- Add the melted vegan butter, plant-based milk, and vanilla extract to the dry ingredients. Mix well until a dough forms.
- Divide the dough into eight equal portions and flatten each portion into a disk.
- Place an apricot half in the center of each dough disk and wrap the dough around it, sealing it completely.
- Bring a large pot of water to a boil.
- Carefully place the dumplings in the boiling water and cook for about 10-12 minutes or until they float to the surface.
- Using a slotted spoon, remove the dumplings from the water and let them drain briefly.
- Serve the dumplings warm, dusted with powdered sugar.
