Ingredients
- 1 tablespoon coconut oil
- 1 onion, diced
- 3 cloves of garlic, minced
- 1 tablespoon fresh ginger, grated
- 1 tablespoon turmeric powder
- 1 can (14 oz) coconut milk
- 4 cups vegetable broth
- 2 tablespoons soy sauce or tamari (gluten-free option)
- 1 tablespoon lime juice
- 1 teaspoon brown sugar or coconut sugar
- Salt and pepper to taste
- 8 oz rice noodles
- Fresh cilantro leaves, for garnish
- Lime wedges, for serving
Instructions
- Heat the coconut oil in a large pot over medium heat. Add the diced onion and sauté until it becomes translucent, about 5 minutes.
- Add the minced garlic, grated ginger, and turmeric powder to the pot. Stir and cook for another 1-2 minutes until fragrant.
- Pour in the coconut milk and vegetable broth. Stir well to combine all the ingredients. Bring the mixture to a gentle simmer.
- Add soy sauce (or tamari), lime juice, brown sugar (or coconut sugar), salt, and pepper to the pot. Stir to incorporate the flavors.
- Meanwhile, prepare the rice noodles according to the package instructions. Once cooked, drain and set aside.
- To serve, place a portion of rice noodles in each bowl and ladle the turmeric coconut soup over the noodles.
- Garnish with fresh cilantro leaves and serve with lime wedges on the side.
