Instructions
For the Sweet Potato Kale Bites
- Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper and lightly grease it with olive oil.
- In a large mixing bowl, combine the grated sweet potatoes, chopped kale, grated Parmesan cheese, almond flour, minced garlic, paprika, salt, and black pepper.
- In a separate small bowl, whisk the eggs (or flax eggs if using) and then add them to the sweet potato mixture. Mix everything until well combined.
- Using your hands or a spoon, scoop out portions of the mixture and shape them into bite-sized patties. Place them on the prepared baking sheet.
- Lightly brush the tops of the sweet potato kale bites with olive oil.
- Bake in the preheated oven for about 20-25 minutes, or until the bites are golden brown and crispy on the outside and cooked through.
For the Dipping Sauce (optional)
- While the bites are baking, prepare the dipping sauce. In a small bowl, whisk together the Greek yogurt, lemon juice, honey (or maple syrup), Dijon mustard, salt, and pepper until smooth.
- Once the sweet potato kale bites are done, remove them from the oven and let them cool for a few minutes.
