Ingredients:
Taco Base:
• 6 small corn or flour tortillas
Filling:
• 2 medium sweet potatoes, peeled and cubed
• 1 tbsp olive oil
• 1 tsp chili powder
• 1/2 tsp cumin
• 1/2 tsp smoked paprika
• Salt and pepper to taste
• 1 cup cooked black beans
• 1/4 cup diced red onion
• 1/2 cup shredded red cabbage
• 1/4 cup fresh cilantro, chopped
Lime Crema:
• 1/4 cup vegan yogurt or sour cream
• 1 tbsp lime juice
• 1/2 tsp garlic powder
• Salt to taste
Optional Toppings:
• Diced avocado
• Hot sauce or salsa
• Vegan cheese
Instructions:
- Roast the Sweet Potatoes:
• Preheat oven to 400°F (200°C). Toss sweet potato cubes with olive oil, chili powder, cumin, smoked paprika, salt, and pepper.
• Spread on a baking sheet and roast for 25-30 minutes, flipping halfway. - Prepare the Crema:
• In a small bowl, whisk together vegan yogurt, lime juice, garlic powder, and a pinch of salt. - Assemble the Tacos:
• Warm the tortillas in a dry skillet or microwave.
• Fill each tortilla with roasted sweet potatoes, black beans, red onion, red cabbage, and cilantro. - Drizzle & Garnish:
