These spicy tofu burritos are easy to prepare, taste-adaptable, and fantastic for quick weeknight meals and meal-prepping! keep a large quantity of these in freezer to bake for incredibly quick (and healthy!) meals.
Ingredients:
- 1 tablespoon olive oil
- 1 block (14 ounces) extra-firm tofu, drained and crumbled
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 teaspoon chili powder
- 1 teaspoon cumin
- 1/2 teaspoon paprika
- 1/4 teaspoon cayenne pepper
- 1 red bell pepper, diced
- 1/2 red onion, diced
- 1 can (15 ounces) black beans, drained and rinsed
- 4 whole wheat tortillas
- 1 avocado, sliced
- 1/4 cup fresh cilantro, chopped
- 1 lime, cut into wedges
Instructions:
- Heat olive oil in a large skillet over medium heat. Add crumbled tofu, salt, pepper, chili powder, cumin, paprika, and cayenne pepper. Cook, stirring occasionally, for 5-7 minutes or until tofu is lightly browned.
- Add diced red bell pepper and red onion to the skillet. Cook for an additional 3-4 minutes, or until vegetables are tender.
- Add black beans to the skillet and stir to combine. Cook until beans are heated through, about 2-3 minutes.
- Warm tortillas in the microwave or on a griddle. Divide the tofu mixture evenly among the tortillas.
- Top each burrito with sliced avocado, chopped cilantro, and a squeeze of lime juice.
