Easy to make and tasty, this recipe for spicy corn fritters with jalapenos, coriander, lime zest and cheddar may be served as an appetiser or vegetarian main dish.
Ingredients:
- 1 cup all-purpose flour
- 1/2 cup cornmeal
- 1 tsp baking powder
- 1/2 tsp salt
- 1/4 tsp cayenne pepper
- 1/4 tsp paprika
- 1 egg
- 1/2 cup milk
- 1 tbsp olive oil
- 1 cup canned corn, drained
- 1/4 cup chopped scallions
- 1/4 cup chopped cilantro
- Vegetable oil, for frying
- 1/2 cup sour cream
- 1/4 cup chopped cilantro
- 1 tsp lime juice
- Salt, to taste
Instructions:
- In a large bowl, whisk together flour, cornmeal, baking powder, salt, cayenne pepper, and paprika.
- In a separate bowl, beat the egg, milk, and olive oil together. Add the wet ingredients to the dry ingredients and mix until just combined.
- Fold in the canned corn, scallions, and cilantro.
- In a large skillet, heat vegetable oil over medium-high heat.
- Using a spoon or cookie scoop, drop spoonfuls of batter into the hot oil. Cook for 2-3 minutes on each side, until golden brown.
- Remove the fritters from the oil and place on a paper towel-lined plate to cool.
- To make the cilantro cream, mix together sour cream, cilantro, lime juice, and salt in a small bowl.
- Serve the fritters warm with the cilantro cream on the side.
