Ingredients:
- 1 can (400g) black beans, drained and rinsed
- 1 tbsp olive oil
- 1 small onion, finely chopped
- 2 garlic cloves, minced
- 1 tsp ground cumin
- 1 tsp smoked paprika
- 1/2 tsp chili powder
- 1/4 tsp cayenne pepper (optional, for extra heat)
- Salt and black pepper, to taste
- 8 small corn or flour tortillas
- 1 cup shredded lettuce
- 1 cup diced tomatoes
- 1/2 cup chopped fresh cilantro
- 1 avocado, sliced
- Lime wedges, for serving
For the Lime Crema:
- 1/2 cup sour cream or Greek yogurt
- Juice of 1 lime
- 1 tbsp chopped fresh cilantro
- Salt, to taste
Instructions:
- Prepare the Lime Crema:
In a small bowl, mix together the sour cream or Greek yogurt, lime juice, chopped cilantro, and a pinch of salt. Stir until smooth and set aside.
- Cook the Black Beans:
Heat olive oil in a large skillet over medium heat. Add the chopped onion and cook for 3-4 minutes until softened. Add the minced garlic and cook for another 1 minute. Stir in the ground cumin, smoked paprika, chili powder, and cayenne pepper (if using). Cook for 1 minute until fragrant.
