Isn’t ice cream the ultimate comfort food for all ages? Sweet, cold and fun but make it healthier, easier to digest and tastier! This recipe makes ice cream from frozen bananas. Don’t knock until you’ve tried it!
Ingredients:
- 6 snickerdoodle cookies, frozen
- 4 frozen bananas
- 1 tbsp ground cinnamon
- 1 tsp vanilla extract
- 2 tbsp plant milk
- 1/4 cup pecans, finely chopped
Instructions:
- In a high-speed blender, add all the ingredients (besides the cookies and chopped pecans) and blend on high until well smooth and creamy.
- Pair the frozen cookies in twos and fill each pair with around 1/2 a cup of the nice cream.
- Roll the sides of the cookie sandwiches in the chopped pecans.
- Place the ice cream sandwiches back into the freezer to set for at least 1 hour.
- Let the sandwiches sit for 10 minutes at room temperature before serving. Makes three cookie sandwiches. Enjoy!
