Ingredients:
Base:
• 1 cup cooked quinoa or brown rice
Veggies & Toppings:
• ½ cup shredded red cabbage
• ½ cup roasted sweet potato cubes
• ½ cup steamed broccoli
• ¼ cup sliced avocado
• ¼ cup shredded carrots
• 2 tbsp pumpkin seeds or sunflower seeds
• ½ cup chickpeas, cooked and seasoned (optional: roasted)
• Fresh cilantro or parsley for garnish
Dressing:
• 2 tbsp tahini
• 1 tbsp lemon juice
• 1 tbsp maple syrup or agave
• 1-2 tbsp water (to adjust consistency)
• Salt and pepper to taste
Instructions:
- Prepare the Base:
- Cook quinoa or rice according to package instructions. Let cool slightly and place it at the bottom of your bowl.
- Cook the Veggies (Optional):
- Roast sweet potato cubes at 400°F (200°C) for 20-25 minutes, tossing halfway through. Steam broccoli until tender but still vibrant.
- Assemble the Bowl:
- Arrange red cabbage, roasted sweet potato, steamed broccoli, avocado slices, shredded carrots, chickpeas, and seeds on top of the quinoa.
- Make the Dressing:
- In a small bowl, whisk tahini, lemon juice, maple syrup, and water until smooth. Season with salt and pepper to taste.
- Drizzle & Garnish:
- Pour the tahini dressing over the bowl and garnish with fresh herbs.
