These cherry bites are simple to make at home, and you can serve them with various fruits depending on the season. They are particularly useful if you don’t have a lot of time to make something and don’t want to experiment but yet want a fantastic outcome that will impress your guests!
Ingredients:
- 375 g vegan puff pastry
- 50 g sliced almonds
- 100 g fresh cherries
- 50 grams of blueberries
- plant-based milk
- cherry jam (optional)
- 100 ml vegan cream for whipping
- 1 tsp (8g) vanilla sugar
- 1 tsp (8 g) cream stiffener
- 150 g vegan cream cheese (natural)
- 0.5 tsp ground vanilla
- powdered sugar
- lemon zest
Instructions:
- Preheat the oven to 180°C (convection). Cut the puff pastry into 4×8 cm strips and place on a baking tray lined with baking paper. Brush the puff pastry strips with plant-based milk and top with sliced almonds.
- Bake the puff pastry strips for about 10-12 minutes until golden brown.
- In the meantime, core and quarter or eighth the cherries and cut the blueberries into fine wedges.
- For the cream, whip vegan cream with vanilla sugar and cream stiffener and mix with vegan cream cheese. Season with ground vanilla, powdered sugar and lemon zest and chill the cream in a piping bag.
- As soon as the puff pastry strips have cooled down, optionally spread them with cherry jam and then pipe the cream on in a snake-like pattern. Decorate with cherries and blueberries and serve immediately.
