There are only few ingredients needed for this easy recipe for crispy potato hash pancakes. It is a hash brown-inspired dish that served with some homemade marinara sauce for a filling snack. Perfect as a hearty snack or for breakfast!
Ingredients:
- 2 large potatoes, peeled and grated (about 2 cups)
- 1/2 onion, grated
- 2 eggs, beaten
- 1/4 cup all-purpose flour
- 1/2 tsp baking powder
- 1/2 tsp salt
- 1/4 tsp black pepper
- 2 tbsp olive oil
Instructions:
- In a large mixing bowl, combine grated potatoes and grated onion.
- Add beaten eggs, flour, baking powder, salt, and black pepper. Mix well.
- Heat olive oil in a large nonstick skillet over medium-high heat.
- Using a 1/4 cup measuring cup, scoop potato mixture into skillet, flattening each pancake with a spatula.
- Cook for 3-4 minutes on each side, until golden brown and crispy.
- Repeat until all potato mixture is used, adding more olive oil to the skillet as needed.
- Serve hot and enjoy!
