Ingredients
For the Kohlrabi Schnitzel
- 2 kohlrabi bulbs, peeled and sliced into 1/2-inch thick rounds
- 1 cup breadcrumbs (use gluten-free breadcrumbs if needed)
- 1/2 cup all-purpose flour (or gluten-free flour)

For the Kohlrabi Schnitzel
- Start by preparing the kohlrabi. Peel the kohlrabi bulbs and slice them into rounds about 1/2-inch thick.
- In a shallow dish, mix together the breadcrumbs, paprika, salt, and black pepper.
- In another shallow dish, place the all-purpose flour.
- In a third shallow dish, whisk together the plant-based milk and Dijon mustard.
- Dip each kohlrabi slice into the flour, making sure it’s evenly coated, then dip it into the milk mixture, and finally coat it with the breadcrumb mixture. Press the breadcrumbs onto the kohlrabi to ensure they adhere well.
- Heat vegetable oil in a skillet over medium-high heat. Once the oil is hot, add the breaded kohlrabi slices and fry until they are golden brown on both sides, about 3-4 minutes per side. Place them on a paper towel-lined plate to remove excess oil.
For the Cucumber Salad
- In a mixing bowl, combine the thinly sliced cucumbers, red onion, and chopped dill.
- In a separate small bowl, whisk together the apple cider vinegar, olive oil, sugar, salt, and black pepper.
- Pour the dressing over the cucumber mixture and toss everything together until well combined.
