Kinpira Gobo, a delectable side dish of carrot and burdock root in a sauce of soy, mirin, and sake, is stir-fried to perfection, and also vegan-friendly
Ingredients:
- 1 burdock root (about 300g)
- 1 carrot (about 150g)
- 1 tbsp sesame oil
- 1 tbsp vegetable oil
- 2 tbsp soy sauce
- 2 tbsp mirin
- 1 tbsp sake
- 1 tsp sugar
- 1 tsp chili flakes
- 1 tbsp sesame seeds
Instructions:
- Peel the burdock root and carrot and cut them into thin matchsticks.
- Soak the burdock root in water for a few minutes to remove any bitterness.
- Heat the sesame oil and vegetable oil in a pan over medium heat.
- Add the burdock root and carrot and stir-fry for about 5 minutes.
- In a small bowl, mix together the soy sauce, mirin, sake, sugar, and chili flakes.
- Add the sauce to the pan and stir-fry for another 5-10 minutes, or until the vegetables are tender and the sauce has thickened.
- Sprinkle sesame seeds over the top and serve hot.
