These bite-sized vegan sausage rolls made with sweet potato are flaky, flavorful, and just right for the forthcoming holiday season. These sausage rolls are really simple to make and don’t require you to bake your own pastry, making them the ideal accompaniment to a celebratory feast.
Ingredients
- 1 can jackfruit
- 1 tablespoon olive oil
- 1 small white onion, finely chopped
- 2 cloves garlic, minced
- 1 tablespoon smoked paprika
- 1/2 teaspoon chili powder
- 1/2 teaspoon liquid smoke
- pinch of cayenne pepper
- 1/4 cup BBQ sauce of your choice
- 1 medium sweet potato, cooked, peeled and cut into cubes
- small bunch coriander, finely chopped
- 2 puff pastry sheets, thawed
- 1/4 cup melted dairy-free butter (optional)
- 2 tablespoons poppy seeds
Instructions
- In a frying pan heat oil over medium heat and add onions and garlic. Cook for 5 minutes or until onions are golden brown. Add in jackfruit, paprika, chili powder, liquid smoke and cayenne. Cook for a couple of minutes. Add in BBQ sauce and cook for another 3 minutes.
- In a bowl combine jackfruit, sweet potato, and coriander. Add seasonings. Preheat air fryer. Lay out 2 sheets of puff pastry, cutting each in half lengthwise. Add the jackfruit mixture along the long edge and roll the pastry over to seal. Cut into 6 small rolls. Repeat with the remaining pastry. Brush each roll with melted butter and sprinkle with poppy seeds. Air fry for 15 minutes or until golden brown. Serve the sausage rolls warm with BBQ sauce on the side and enjoy right away.
