The homemade version of Ferrero Rocher has a whole roasted hazelnut in the centre, a wonderful, creamy hazelnut filling all around, and is then wrapped in chocolate and crunchy hazelnut bits.
Ingredients:
- 1 cup hazelnuts
- 1/4 cup cocoa powder
- 1/4 cup honey
- 2 tbsp coconut oil
- 1 tsp vanilla extract
- 1/8 tsp salt
- Dark chocolate chips (optional)
Instructions:
- Preheat your oven to 350°F (180°C).
- Spread the hazelnuts out on a baking sheet and roast them in the oven for 10-12 minutes, or until they are fragrant and lightly browned.
- Once the hazelnuts have cooled, transfer them to a food processor and pulse until they are finely ground.
- Add the cocoa powder, honey, coconut oil, vanilla extract, and salt to the food processor and continue to pulse until everything is well combined.
- If the mixture is too dry, add more coconut oil.
- Roll the mixture into small balls and place them on a baking sheet lined with parchment paper.
- Chill the balls in the refrigerator for at least 30 minutes.
- Optional: melt some dark chocolate chips in the microwave or using a double boiler, and dip the balls in the melted chocolate.
- Chill the balls again until the chocolate has hardened.
- Serve and enjoy!
