This Grilled Salmon Salad is ideal for summer barbecues and outdoor events. This dinner salad is loaded with fresh organic produce, and in addition to being nutritious and simple to prepare, it is also bursting with mouthwatering summer flavour. Low-carb and Keto diets.
Ingredients:
- 4 salmon fillets (skin-on)
- 8 cups mixed greens
- 2 avocados, sliced
- 1 red onion, sliced
- 1 cup cherry tomatoes, halved
- 1/4 cup chopped fresh cilantro
- 1/4 cup olive oil
- 2 tbsp apple cider vinegar
- 2 tbsp lime juice
- 1 tbsp honey
- 1/4 cup Greek yogurt
- 1 garlic clove, minced
- Salt and pepper to taste
Instructions:
- Preheat grill to medium-high heat.
- Season salmon fillets with salt and pepper and grill for 4-5 minutes on each side or until cooked through.
- In a large bowl, combine mixed greens, sliced avocado, red onion, cherry tomatoes, and chopped cilantro.
- In a small bowl, whisk together olive oil, apple cider vinegar, lime juice, honey, Greek yogurt, minced garlic, and salt and pepper to taste.
- Pour the dressing over the salad and toss to combine.
- Divide the salad into four bowls and top with grilled salmon fillets.
