One of our favourite quick dinners has always been a packet of store-bought gnocchi, but things just got a whole lot simpler. This is due to the fact that we learned you can prepare gnocchi for dinner without even having to boil it.
Ingredients
- 1 package (500g) of vegan gnocchi
- 1 tablespoon olive oil
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 red bell pepper, thinly sliced
- 1 green bell pepper, thinly sliced
- 1 package (250g) of vegan mince (e.g., soy mince, textured vegetable protein)
- 1 can (400g) of diced tomatoes
- 1 teaspoon dried basil
- 1 teaspoon dried oregano
- Salt and pepper to taste
- Fresh basil leaves for garnish (optional)
Instructions
- Cook the gnocchi according to the package instructions. Drain and set aside.
- In a large skillet, heat the olive oil over medium heat. Add the diced onion and minced garlic, and sauté until the onion becomes translucent.
- Add the sliced red and green bell peppers to the skillet and cook for a few minutes until they start to soften.
- Add the vegan mince to the skillet and cook, stirring occasionally, until it’s heated through and slightly browned.
- Pour in the diced tomatoes, dried basil, and dried oregano. Stir well to combine all the ingredients. Season with salt and pepper to taste.
- Simmer the mixture for about 5-7 minutes to allow the flavors to meld together.
- Add the cooked gnocchi to the skillet and gently stir to coat the gnocchi with the sauce. Cook for an additional 2-3 minutes to heat the gnocchi.
- Remove from heat and serve hot. Garnish with fresh basil leaves, if desired.
