Gnocchi Pan With Vegan Mince And Peppers

One of our favourite quick dinners has always been a packet of store-bought gnocchi, but things just got a whole lot simpler. This is due to the fact that we learned you can prepare gnocchi for dinner without even having to boil it.

Ingredients

  • 1 package (500g) of vegan gnocchi
  • 1 tablespoon olive oil
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 red bell pepper, thinly sliced
  • 1 green bell pepper, thinly sliced
  • 1 package (250g) of vegan mince (e.g., soy mince, textured vegetable protein)
  • 1 can (400g) of diced tomatoes
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • Fresh basil leaves for garnish (optional)

Instructions

  1. Cook the gnocchi according to the package instructions. Drain and set aside.
  2. In a large skillet, heat the olive oil over medium heat. Add the diced onion and minced garlic, and sauté until the onion becomes translucent.
  3. Add the sliced red and green bell peppers to the skillet and cook for a few minutes until they start to soften.
  4. Add the vegan mince to the skillet and cook, stirring occasionally, until it’s heated through and slightly browned.
  5. Pour in the diced tomatoes, dried basil, and dried oregano. Stir well to combine all the ingredients. Season with salt and pepper to taste.
  6. Simmer the mixture for about 5-7 minutes to allow the flavors to meld together.
  7. Add the cooked gnocchi to the skillet and gently stir to coat the gnocchi with the sauce. Cook for an additional 2-3 minutes to heat the gnocchi.
  8. Remove from heat and serve hot. Garnish with fresh basil leaves, if desired.
