This recipe for vegan meatballs is simple to prepare, rich in protein, and flavorful. A fantastic weeknight plant-based supper.
Ingredients:
- 1 can of chickpeas, drained and rinsed
- 1/2 cup of breadcrumbs
- 1/4 cup of ground flaxseed
- 1/4 cup of nutritional yeast
- 2 cloves of garlic, minced
- 1 tablespoon of Italian seasoning
- Salt and pepper to taste
- 2 tablespoons of olive oil
Instructions:
- Preheat your oven to 375°F (190°C).
- In a food processor, blend the chickpeas, breadcrumbs, flaxseed, nutritional yeast, garlic, Italian seasoning, salt, and pepper until well combined.
- Roll the mixture into balls and place them on a baking sheet.
- Drizzle the olive oil over the meatballs.
- Bake for 25-30 minutes, or until golden brown.
