Crispy Stuffed Jalapeño Poppers

A spicy, cheesy, and satisfyingly crunchy snack—perfect for parties, game nights, or whenever you need a bold bite!

Ingredients

For the Filling:

  • 8 fresh jalapeños, halved and deseeded
  • ½ cup dairy-free cream cheese
  • ¼ cup shredded vegan cheddar
  • 1 tbsp nutritional yeast (for extra cheesy flavor)
  • ½ tsp garlic powder
  • ½ tsp smoked paprika
  • ¼ tsp salt

For the Coating:

  • ½ cup unsweetened plant-based milk (almond, oat, or soy)
  • ⅓ cup all-purpose flour (or gluten-free alternative)
  • 1 cup panko breadcrumbs
  • ½ tsp onion powder
  • ½ tsp black pepper
  • ½ tsp salt

For Frying or Baking:

  • Cooking oil (for frying) or cooking spray (for baking)

Instructions

  1. Prepare the jalapeños:
    • Preheat your oven to 400°F (or heat oil for frying).
    • Slice jalapeños in half lengthwise and remove the seeds for a milder spice level.
  2. Make the filling:
    • In a bowl, mix dairy-free cream cheese, shredded vegan cheddar, nutritional yeast, garlic powder, smoked paprika, and salt until well combined.
    • Fill each jalapeño half with the mixture, smoothing it evenly.
  3. Coat the poppers:
    • Set up a coating station with three bowls: one with flour, one with plant-based milk, and one with panko breadcrumbs mixed with onion powder, black pepper, and salt.
    • Dip each stuffed jalapeño into the flour, then the plant-based milk, and finally coat it in the seasoned breadcrumbs.
  4. Cook to crispy perfection:
    • For baking: Arrange on a lined baking sheet, lightly spray with cooking oil, and bake for 20-25 minutes until golden and crispy.
    • For frying: Heat oil in a pan and fry for 2-3 minutes per side until golden brown, then transfer to a paper towel-lined plate.
  5. Serve & enjoy:
    • Let cool for a few minutes before serving.
    • Pair with vegan ranch, guacamole, or your favorite dipping sauce!

Tips:

  • For extra heat, leave some seeds in the jalapeños.
  • Air-fry at 375°F for about 10-12 minutes for a crispier, healthier option.
  • Swap out panko for crushed tortilla chips for added crunch and flavor.
