To prepare a simple Pumpkin Pasta Sauce, combine a few ingredients with pumpkin puree. For a creamy and delectable supper, serve it over fettuccine, penne, spaghetti, or any of your favourite noodles!
Ingredients:
- 8 oz uncooked egg noodles
- 1 can (15 oz) pure pumpkin puree
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 2 cloves garlic, minced
- 1/2 tsp dried thyme
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 tsp ground nutmeg
- 1/4 cup breadcrumbs
- 1 tbsp butter, melted
Instructions:
- Preheat the oven to 375°F.
- Cook the egg noodles according to the package instructions. Drain and set aside.
- In a large mixing bowl, whisk together the pumpkin puree, heavy cream, Parmesan cheese, minced garlic, dried thyme, salt, black pepper, and ground nutmeg until smooth.
- Add the cooked egg noodles to the mixing bowl and toss until the noodles are fully coated in the pumpkin mixture.
- Transfer the noodle mixture to a 9×13 inch baking dish.
- In a small bowl, mix together the breadcrumbs and melted butter. Sprinkle the breadcrumb mixture over the top of the noodle mixture.
- Bake the casserole for 25-30 minutes, or until the top is golden brown and the casserole is heated through.
- Serve hot and enjoy!
