Couscous-Stuffed Delicata Squash

These Couscous-Stuffed Delicata Squash are a lovely and soothing dish to serve at your holiday table this year!

Ingredients

  • 2 delicata squash
  • 1 cup pearl couscous
  • 2 cups vegetable broth
  • 1 tablespoon olive oil
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1/2 cup chopped bell peppers (any color you prefer)
  • 1/2 cup chopped zucchini
  • 1/2 cup chopped cherry tomatoes
  • 1/4 cup chopped fresh parsley
  • 1/4 cup chopped fresh mint leaves
  • 1/4 cup chopped walnuts or pine nuts (optional)
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 200°C (390°F).
  2. Cut each delicata squash in half lengthwise and scoop out the seeds and pulp from the center.
  3. Place the squash halves on a baking sheet, cut-side up, and brush them with a little olive oil. Season with salt and pepper.
  4. Roast the squash in the preheated oven for about 25-30 minutes or until they are tender and can be easily pierced with a fork.
  5. While the squash is roasting, prepare the couscous. In a saucepan, bring the vegetable broth to a boil.
  6. Add the pearl couscous to the boiling broth, reduce the heat to low, cover, and let it simmer for about 10-12 minutes or until the couscous is cooked and has absorbed all the liquid. Fluff the couscous with a fork and set it aside.
  7. In a separate skillet, heat the olive oil over medium heat.
  8. Add the finely chopped onion to the skillet and sauté until it becomes translucent.
  9. Stir in the minced garlic, chopped bell peppers, and chopped zucchini. Cook the vegetables for a few minutes until they are tender.
  10. Add the cooked couscous, chopped cherry tomatoes, chopped parsley, and chopped mint to the skillet. Mix everything well and cook for another minute or two to heat the ingredients through.
  11. If desired, add chopped walnuts or pine nuts to the couscous stuffing for extra texture and flavor.
  12. Season the couscous stuffing with salt and pepper to taste.
  13. Once the delicata squash halves are done roasting, remove them from the oven.
  14. Fill each squash half with the prepared couscous stuffing, pressing it down gently to pack it.
  15. Serve the Couscous-Stuffed Delicata Squash hot, garnished with additional fresh herbs if desired.
