These Couscous-Stuffed Delicata Squash are a lovely and soothing dish to serve at your holiday table this year!
Ingredients
- 2 delicata squash
- 1 cup pearl couscous
- 2 cups vegetable broth
- 1 tablespoon olive oil
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1/2 cup chopped bell peppers (any color you prefer)
- 1/2 cup chopped zucchini
- 1/2 cup chopped cherry tomatoes
- 1/4 cup chopped fresh parsley
- 1/4 cup chopped fresh mint leaves
- 1/4 cup chopped walnuts or pine nuts (optional)
- Salt and pepper to taste
Instructions
- Preheat your oven to 200°C (390°F).
- Cut each delicata squash in half lengthwise and scoop out the seeds and pulp from the center.
- Place the squash halves on a baking sheet, cut-side up, and brush them with a little olive oil. Season with salt and pepper.
- Roast the squash in the preheated oven for about 25-30 minutes or until they are tender and can be easily pierced with a fork.
- While the squash is roasting, prepare the couscous. In a saucepan, bring the vegetable broth to a boil.
- Add the pearl couscous to the boiling broth, reduce the heat to low, cover, and let it simmer for about 10-12 minutes or until the couscous is cooked and has absorbed all the liquid. Fluff the couscous with a fork and set it aside.
- In a separate skillet, heat the olive oil over medium heat.
- Add the finely chopped onion to the skillet and sauté until it becomes translucent.
- Stir in the minced garlic, chopped bell peppers, and chopped zucchini. Cook the vegetables for a few minutes until they are tender.
- Add the cooked couscous, chopped cherry tomatoes, chopped parsley, and chopped mint to the skillet. Mix everything well and cook for another minute or two to heat the ingredients through.
- If desired, add chopped walnuts or pine nuts to the couscous stuffing for extra texture and flavor.
- Season the couscous stuffing with salt and pepper to taste.
- Once the delicata squash halves are done roasting, remove them from the oven.
- Fill each squash half with the prepared couscous stuffing, pressing it down gently to pack it.
- Serve the Couscous-Stuffed Delicata Squash hot, garnished with additional fresh herbs if desired.
