Ingredients:
- 1 ½ cups diced pineapple
- 1-2 canned chipotle peppers in adobo sauce, minced
- ¼ cup chopped red onion
- 2 tbsp chopped fresh cilantro
- 2 tbsp fresh lime juice
- Salt to taste
Instructions:
- Preheat your oven to 400°F.
- Spread the diced pineapple on a baking sheet lined with parchment paper and roast for 20-25 minutes, or until slightly caramelized.
- In a bowl, combine the roasted pineapple, minced chipotle peppers, chopped red onion, chopped cilantro, and fresh lime juice.
- Mix well, and season with salt to taste.
