Cauliflower Pizza Bites

Without all the dairy and carbohydrates, these vegan cauliflower pizza bites will satisfy your pizza cravings! For a delicious snack, personalise them with your favourite pizza toppings!

Ingredients

  • 1 medium cauliflower head, cut into florets
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 1 large egg, lightly beaten
  • 1 teaspoon dried oregano
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup pizza sauce
  • Toppings of your choice (e.g., sliced pepperoni, diced bell peppers, sliced olives)
  • Optional: fresh basil leaves for garnish

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it.
  2. Place the cauliflower florets in a food processor and pulse until they resemble a rice-like texture.
  3. Transfer the cauliflower rice to a microwave-safe bowl. Microwave on high for about 5-6 minutes, or until the cauliflower is cooked and soft. Let it cool for a few minutes.
  4. Once the cauliflower has cooled, transfer it to a clean kitchen towel or cheesecloth. Squeeze out as much moisture as possible. This step is crucial to achieve a crispy texture.
  5. In a mixing bowl, combine the squeezed cauliflower, shredded mozzarella cheese, grated Parmesan cheese, beaten egg, dried oregano, garlic powder, salt, and black pepper. Mix well until all the ingredients are evenly incorporated.
  6. Take small portions of the cauliflower mixture and shape them into bite-sized rounds or mini pizza crusts. Place them on the prepared baking sheet.
  7. Bake the cauliflower pizza bites in the preheated oven for about 20-25 minutes, or until they turn golden brown and crispy.
  8. Remove the baking sheet from the oven and let the pizza bites cool for a few minutes. Top each bite with a spoonful of pizza sauce and your choice of toppings.
  9. If desired, return the baking sheet to the oven and broil the pizza bites for 2-3 minutes, or until the cheese has melted and the toppings are slightly browned.
  10. Garnish with fresh basil leaves, if desired. Serve the cauliflower pizza bites warm.
