Ingredients:
- 1 large carrot, grated
- 1/2 cup of cabbage, thinly sliced
- 1/4 cup of hummus
- 2 tablespoons of Greek yogurt
- 1 tablespoon of lemon juice
- 1 tablespoon of olive oil
- Salt and pepper to taste
- 1 whole wheat pita pocket, cut in half
Instructions:
- In a bowl, mix together the grated carrot and sliced cabbage.
- In a separate bowl, mix together the hummus, Greek yogurt, lemon juice, olive oil, salt, and pepper.
- Add the hummus mixture to the carrot and cabbage mixture and stir until well combined.
- Fill the pita pocket halves with the carrot and cabbage mixture.
