Ingredients:
- 1 medium sweet potato, peeled and diced
- 1 can black beans, drained and rinsed
- 1 red bell pepper, diced
- 1/2 red onion, diced
- 1 clove garlic, minced
- 1 tsp. cumin
- 1 tsp. chili powder
- Salt and pepper, to taste
- 4 large tortillas
- 1 cup shredded cheddar cheese
- Optional toppings: avocado, salsa, sour cream, cilantro
Instructions:
- Preheat oven to 400°F.
- In a large skillet, heat a drizzle of oil over medium-high heat. Add sweet potato and cook until tender, about 10 minutes.
- Add black beans, red bell pepper, red onion, garlic, cumin, chili powder, salt, and pepper to the skillet. Cook for an additional 5 minutes, stirring occasionally.
- Place tortillas on a baking sheet. Sprinkle cheese evenly over half of each tortilla.
- Spoon sweet potato and black bean mixture over the cheese.
- Fold tortillas in half and press down gently to seal.
- Bake in preheated oven for 8-10 minutes, or until cheese is melted and tortillas are lightly browned.
- Slice into wedges and serve with desired toppings.
