Instructions
Preheat and Prepare
- Preheat your oven to 350°F (175°C).
- Grease a donut pan with a little oil or non-stick cooking spray.
Prepare the Donut Batter
- In a mixing bowl, whisk together the flour, sugar, baking powder, and salt.
- In a separate bowl, combine the almond milk, applesauce, melted coconut oil, and vanilla extract.
- Pour the wet ingredients into the dry ingredients and mix until just combined. Do not overmix.
- Gently fold in the fresh blueberries.
Fill the Donut Pan
- Spoon the batter into a piping bag or a zip-top bag with the corner snipped off.
- Pipe the batter evenly into the prepared donut pan, filling each cavity about 2/3 full.
Bake
Bake the donuts in the preheated oven for 12-15 minutes or until they are lightly golden and a toothpick inserted into a donut comes out clean.
Glaze the Donuts:
- In a bowl, whisk together the powdered sugar, plant-based milk, and vanilla extract until you have a smooth glaze.
- Once the donuts are slightly cooled but still warm, dip each donut into the glaze, allowing any excess to drip off.
Serve
Place the glazed donuts on a wire rack to set. The glaze will firm up as it cools.
