Spicy Black Bean Tacos

Enjoy a burst of flavor with these Spicy Black Bean Tacos. Loaded with seasoned black beans, fresh vegetables, and topped with a zesty lime crema, these tacos are a delicious and satisfying option for lunch or dinner.

Ingredients:

  • 1 can (400g) black beans, drained and rinsed
  • 1 tbsp olive oil
  • 1 small onion, finely chopped
  • 2 garlic cloves, minced
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • 1/2 tsp chili powder
  • 1/4 tsp cayenne pepper (optional, for extra heat)
  • Salt and black pepper, to taste
  • 8 small corn or flour tortillas
  • 1 cup shredded lettuce
  • 1 cup diced tomatoes
  • 1/2 cup chopped fresh cilantro
  • 1 avocado, sliced
  • Lime wedges, for serving

For the Lime Crema:

  • 1/2 cup sour cream or Greek yogurt
  • Juice of 1 lime
  • 1 tbsp chopped fresh cilantro
  • Salt, to taste

Instructions:

  1. Prepare the Lime Crema:

In a small bowl, mix together the sour cream or Greek yogurt, lime juice, chopped cilantro, and a pinch of salt. Stir until smooth and set aside.

  1. Cook the Black Beans:

Heat olive oil in a large skillet over medium heat. Add the chopped onion and cook for 3-4 minutes until softened. Add the minced garlic and cook for another 1 minute. Stir in the ground cumin, smoked paprika, chili powder, and cayenne pepper (if using). Cook for 1 minute until fragrant.

  1. Add Beans:

Add the black beans to the skillet and cook for 5-7 minutes, stirring occasionally, until heated through and slightly crispy. Season with salt and black pepper to taste.

  1. Warm the Tortillas:

Heat the tortillas in a dry skillet over medium heat for about 30 seconds on each side, or wrap them in a damp paper towel and microwave for 20-30 seconds until warm.

  1. Assemble the Tacos:

Spread a spoonful of the black bean mixture onto each tortilla. Top with shredded lettuce, diced tomatoes, chopped cilantro, and avocado slices.

6. Drizzle and Serve:

Drizzle with lime crema and serve with lime wedges on the side for extra zest. Enjoy!
